French Toast Muffins

French toast is one of my favorite indulgent weekend breakfasts. Baked in a casserole or cooked on the griddle, nothing beats a stack of french toast smothered in warm maple syrup. These french toast muffins encompass all I love about regular french toast right in a portable little package. Baked up golden brown, brushed with maple syrup and lightly dusted with powdered sugar, these muffins are sure to put a smile on your face.

Whether you re looking for something for the weekends, holidays, or special occasion, add these french toast muffins to your list of favorites because they are incredible. We love to whip them up all the time and indulge! Plus, if you want to make a person’s day, then taking them a muffin is a fantastic way to do it. Make a batch to take to work with you or visit a neighbor. They will be smiling from ear to ear when they bite into these beauties.

Not only will you love these french toast muffins with maple syrup, but even your kids will eat them like the world is coming to an end. They won’t hesitate to go back for more either. Sometimes we like to complete the meal by serving with a piece or two of sausage. It balances out the sweetness perfectly.

Do These Require Real Maple Syrup?

Yes, these muffins are amazing when they have real maple syrup added to them. If you can’t have real maple syrup or just don’t enjoy it, you can easily swap it out with an alternative. The flavor and texture won’t exactly be the same, but it will be very good and delicious.

Can I Freeze French Toast Muffins?

Yes, you can freeze these french toast muffins! They are best when you do a flash-freezing method. Simply place them on any kind of baking sheet or cookie sheet and let them freeze for 1-3 hours. Once they have frozen fairly solid, you can place them inside of another freezer container. This will keep the muffins from sticking together and giving you a giant mess later.

To eat the muffins, place them on the counter for a few hours or put them in the fridge overnight so they can thaw out all the way. Then if you prefer the french toast muffins warm (I know that’s how I like them), then put them in the microwave with a paper towel wrapped around them. Warm up for 20 seconds or so until they are hot, then devour!

Can You add Berries to The Batter?

Yes, adding berries is a great way to add some other flavors to the muffins. We will add in some blueberries, strawberries, or raspberries from time to time. They are pure heaven on their own, but adding fruit gives them a whole new level of amazingness.

  • All-purpose flour
  • Sugar

  • Baking soda

  • Eggs
  • Buttermilk
  • Maple extract

How to Make French Toast Muffins

Because you are making muffins instead of actual french toast, you will not have to put as much effort into constantly watching them. I prefer this because french toast is so fussy and you have to spend a lot of time watching them like a hawk. Let’s get started so you can get these french toast muffins in your belly!

First Step: Start off by preheating the oven to 400ºF. Then line the muffin cups with muffin liners and set aside.

Second Step: Using a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt with a whisk then set aside.

Third Step: Using a separate bowl, combine the buttermilk, maple extract, egg, and melted butter together until mixed well.

Fourth Step: Prepare a well in the center of the dry ingredients. Then slowly pour in the buttermilk mixture. Combine all of the ingredients until they are just incorporated. Take special care not to over mix the batter, or it will lead to a dense and hard muffin.

Fifth Step: Pour batter equally among the prepared muffin cups. Then bake until golden brown, and you can insert a toothpick into the center of the muffins, and it comes out clean, 10 to 12 minutes.

Sixth Step: Use a toothpick or fork to gently poke holes in the tops of all the muffins. Then gently spoon or brush maple syrup onto each muffin. Add a dusting of confectioners’ sugar and serve warm. Enjoy!
