Hard Boiled vs Baked Eggs

Eggs are awesome. A true “fast food” to have ready to go. I’ve tried so many methods to figure out the best way to hard boil eggs or cook in shell– strict boiling time, certain amount of ice to cool, baking soda, peeling a certain way, you name it!

While some ways were easier than others, I’ve came up with a better solution:

Avoid the shell all together and…

Bake the eggs!

Maybe you’re now thinking yikes! What will happen if I cook an egg in the oven?! Well, let me tell you…

Convenience!

Blissful, easy convenience.

No peeling pieces of shell (only to have part of the egg with it), no discolored yolk (mine always tend to turn greyish, yuck)! And with a tastier texture of a hardboiled egg.

Baked eggs are where it’s at when we talk about keeping it brief.

4 Ingredient Baked Egg Recipe

Following the simple method for baking eggs (ie. crack egg into cup and bake), you’ll love the extra touch I’m including here- a bit of cream, seasoning and savory bits of bacon. Just 4 ingredients!

Keep these in your fridge for a great breakfast, snack, lunch or dinner.

Simple Ingredients:

  • Eggs
  • Milk
  • Salt + Pepper
  • Bacon bits

What equipment do I need?

You just need a muffin pan.

However, I will always recommend silicone bakeware for muffins (see my 5 tips for using silicone bakeware!) and related recipes.

Why?

For a million different reasons but when it comes to eggs, let’s focus on one thing:

Getting the egg out of the muffin cup!

It’ll just pop right out. Use a little nonstick spray (optional with silicone) and you’re well on your way.

Therefore, your egg muffin is still intact and there’s hardly any clean up. When was the last time you could say that?!

I own two types of silicone muffin pans but for this recipe I am using this affordable 6 cup muffin pan –Nonstick, food grade, BPA free!

Okay, now that you’re sold on silicone, let’s get on to the “how to” of this recipe.

How to bake eggs in muffin tin:

You’ll be amazed at how easy this is!

  1. Preheat oven to 350 degrees
  2. Crack eggs in each muffin slot
  3. Add the flavor– here’s it’s milk, salt and pepper, and bacon
  4. Slightly stir yolks (optional)
  5. Bake!

Cool from oven and enjoy or store in airtight glassware in fridge for the week.

How long to bake eggs?

On average, the eggs only take 20 minutes, or until the whites don’t jiggle.

Ultimately the time depends on how you like the yolk.

How to bake eggs with runny yolks

You can control how the yolk cooks, which is another advantage of baked eggs over hard boiled eggs.

So, if you like the yolks more on the runny side, shorten the cook time.

We are non- runny yolk folks here, so I bake them right up to 20 minutes. And I slightly agitate/stir the yolks with a knife prior to baking to ensure consistency. See step 4 above.

Tips/Tricks:

  • To ensure a consistent, firm yolk, agitate (shake/stir) the yolk before cooking
  • Customize by adding desired topping– diced veggies, seasonings, etc. How delicious would cheesy baked eggs be?!
  • You can omit milk or bacon bits (though the milk is sooo good here!)
  • Place silicone bakeware on baking pan for additional stability
  • Are you looking to bake eggs for sandwiches? I’ve got you covered there! You can cut an egg in half transversely (left to right). It’s actually the perfect size for a mini bagel sandwich! This also works well for small kiddos who may not want a whole muffin 😉

Are baked eggs healthy

Yes! Baked eggs are healthy because eggs are healthy. I refer to eggs as “protein balls” due to their protein content and being nutrient dense. Overall, one egg has:

  • 6 grams of protein
  • less than 1 gram of carbohydrates
  • 78 calories
  • Vitamin A, B, D that support so many of our body functions

With the simple additions in this recipe, you’re getting even more protein (9 grams!) and flavor.

  • 6 eggs
  • 6 tbsp milk
  • 1/4 cup bacon bits real
  • salt and pepper to taste

Instructions

  • Preheat oven to 350 degrees and spray muffin pan with nonstick spray

  • Crack one egg into each muffin cup

  • Add 1 tsp of milk to each egg. Season with salt and pepper

  • Sprinkle bacon bits evenly upon eggs

  • Bake for 15-20 minutes, or until yolk reaches desired consistency

  • Let cool and enjoy or store in fridge

Notes

For firm, consistent cooked yolks, use knife to gently stir yolk prior to baking
