Ingredients 3 large diced tomatoes1 diced medium sized onion1/4 bunch of cilantro (use more or less depending on your taste)juice of half a lemon1/2 teaspoon of minced garlic1 tsp of salt2 jalapenos (or more if you prefer it hotter)Optional ingredients (not included in nutrition facts)half a cucumber, peeled and diced1 avocado, peeled and diced
Directions
1. Wash tomatoes and cilantro.
2. Dice tomatoes, onions, chop cilantro, jalapenos, and the optional ingredients (avocado, cucumber)
3. Put ingredients in a bowl.
4. Add salt, garlic, the juice of half a lemon. Mix it up and serve.* you can roast your tomatoes for great flavor.
heat up a frying pan or skillet on medium high heat. Place whole tomatoes in the cookware and toast the outside of it until the skin begins to break and split apart. remove from heat and continue with step two.
note if you prefer smooth salsa as opposed to chunky just put all this good stuff in the blender.

White Chicken Chili
This is a modified version of a recipe on allrecipes.com that I enjoy greatly and that gives you a lot of protein, a lot of taste, and very few calories. You could make it much faster and easier with pre-prepared chicken breast, first sauteed with the onions and garlic in olive oil. Salsa/Pico recipes like this are also surprisingly good using diced canned tomatoes. If you haven't tried this trust me it will taste nearly as good as fresh. I frequently add green peppers for a more trad salsa. Lime/or Lemon juice is key as it makes it taste brighter. - 6/18/08

This is similar to a recipe I use all the time. I leave out the jalepeno and use about 4 times the garlic! That gives it plenty of zing. Awesome with tacos. Also great mixed with a pouch of tuna for a low-cal and very tasty tuna salad. - 5/12/08
